Have you ever tried zucchini pasta? My dear friend and roommate has this wonderful contraption that can turn veggies into NOODLES!
Tonight, I took it for a test drive and I couldn’t be more pleased with the result. It was quick, painless and my belly is very happy.
Pesto Zucchini Pasta
1 zucchini, spun
2 garlic cloves, minced
2 tbsp of Jamie Oliver’s Basil Pesto Sauce
1 small handful pine nuts
1 tbsp hulled hemp seed
1 tbsp olive oil
Lightly brown garlic in olive oil in a sauce pan. Add zucchini noodles. Stir in pesto sauce for 5 minutes until all the zucchini has been kissed by the sauce. Add pine nuts and hemp seed and stir for another minute then serve in a bowl.
