My roommate shared this little ditty with me tonight. Soaking nuts, seeds and legumes before consumption makes for better digestion of the food and absorption of the nutrients. As stated in The Radiant Life Blog, “The phytates and enzyme inhibitors that make nuts and seeds so tricky to digest can be easily neutralized by soaking in salt water and low temperature dehydrating. The combination of minerals and heat works to break down irritating compounds, while preserving the beneficial fats and proteins.”
I have a fairly sensitive digestive system and before the cleanse I did in India, I couldn’t eat nuts without a mild allergic reaction. My lips would become itchy and would swell. Since the cleanse I have been consuming almonds, walnuts and pecans with relative ease. The allergic reactions have subsided for the most part but every once in a while, my lips will feel sensitive.
The plan with these walnuts is to soak them for 7 hours, then dehydrate for 12-24hrs and they are ready to eat! Seems like a long process, but it’s definitely worth a try. I’ll keep you posted!
EDIT: Holy bananas, I am doing this from now on to ALL of the nuts and seeds I buy! So much more tastier – even meatier, if that’s a way to describe soaked nuts. If you haven’t tried this already, you MUST. It takes a bit of time and effort but it is worth it!
