Popeye’s Spinach Soup

5 handfuls of fresh spinach
7 okra, chopped
6 big button mushrooms chopped
5 garlic cloves, diced
1/4 leek chopped
1/4 cup water
1/2 cup vegetable stock
1/4 tsp cumin
1 tsp butter

Cook vegetables on medium heat in coconut oil, pinch of salt, pepper & cumin, add water, wait until it boils.  Add vegetable stock, cook until it boils for 2 minutes.

Take it off heat & pour into ceramic bowl. Add butter, use a hand blender to puree into a tasty soup.
